Champagne native Anne-Sophie Dubois is shaking up Beaujolais viticultural scene like no other. Dubois farms her eight hectares in Fleurie all organically and uses a hands-off approach in the winery, favoring classic vinification over the signature Beaujolais-style carbonic. Fruit for Les Labourons (formerly known as Clepsydre) comes from Anne-Sophies organically farmed old vine parcel in Fleurie. Grapes are destemmed and aged for 13 months in neutral oak. This highly terror-reflective wine shows flavors of bright red fruit, tart cherries, and granite-influenced minerality, marked by gritty tannins and a dusty finish.
